Short Rib Beef Stew (Hawaii Style)

Hawaii-style beef stew is one of our favorite local comfort foods and can be found at popular lunch spots across the islands.

1 Tbsp grated

1.5 Tbsp

Ingredients:

2 russet potatoes

1 large onion

2lbs boneless beef short ribs, cubed

3oz

2 large carrots

3 bay leaves

3 stalks

2 Tbsp

1 Tbsp

1 Tbsp


Instructions:

Brown beef over high heat and season with salt and pepper. Then add in shoyu, sugar, and worcestershire.

Let the liquid reduce by half, then throw in the onions, celery, ginger, and bay leaf, and cook over medium heat until the onions and celery soften.

Next add in tomato paste and beef bullion paste, then mix to combine. Continue cooking for a couple minutes, then pour in enough water to cover the beef and vegetables (about 1 quart).

Bring to a boil, then add in carrots and cover. Turn down heat and let this simmer for about 30-40 mins until carrots begin to soften.

Next add in your potatoes and continue to simmer uncovered for another 30 mins until the potatoes are tender and the stew has thickened.

Serve with a few scoops of steaming white rice (and some mac salad if you have) and enjoy!
