Butabara Daikon
This comforting weeknight meal requires just a few ingredients and can be made entirely in your rice cooker.
Minimal effort 🤝 maximum flavor.
Instructions:

1 tsp
2 Tbsp
scallion
1/2 lb sliced pork belly
1 Tbsp
4 Tbsp
1/2 a daikon
1” piece
Prep by cutting daikon into 1/2” quarter round pieces and slicing the ginger.

Add daikon, ginger, pork belly, shoyu, sugar, mirin, and dashi powder to rice cooker bowl.

Pour over about 1/2 cup of water.
3.
Close and cook on mixed or regular setting until the cycle is complete.
4.
Once it’s done, open and mix with a wooden spoon to break up larger pieces of daikon.
5.
Plate and garnish with finely scallion and shichimi togarashi.

Notes: We used a rice cooker for simplicity, but a regular pot or donabe would work fine too.
It took about 45 min to cook in our rice cooker.
