Clams with Sake & Miso

Sake, miso, and butter team-up to form the base of this brothy clam dish. Serve it with a thick, crusty bread or a side of white rice.

Ingredients:

3/4 cup sake

3 Tbsp

1 Tbsp

6 cloves

2 dozen

2 thai chilis


Lightly saute the garlic, ginger, and chilis in a combo of olive oil and 1 Tbsp butter.

Once softened, add in the clams, then the sake. Cover and bring a low boil.

When all the clams have opened, uncover and remove clams.

Bring the remaining liquid to a low simmer, whisk in miso and 2 Tbsp butter and simmer.

Once incorporated, remove from heat, add the clams back to your broth, and garnish with finely chopped chives.

Serve with a thick, crusty bread for dipping!

Notes: Be sure to prep your clams first by washing then soaking in salt water for at least 30 mins.

Olive oil is optional. We like to add it to butter when sauteing to increase the smoke point.

Whisk the butter into the broth vigorously to emulsify. This creates a luscious and tasty broth.
