Hawaiian-Style Garlic Shrimp

Juicy garlic shrimp made famous by the food trucks on Oahu’s North Shore, doused in butter and a whole head of garlic. Real locals eat them shells & all.

Ingredients:

1 tsp cayenne pepper

1 head of garlic

4 Tbsp butter

18 shell-on shrimp

1 Tbsp olive oil

3 Tbsp mochiko flour

1 Tbsp paprika

`1 tsp garlic powder

Devein shrimp while keeping shells intact by piercing through the back at the base of the tail with a toothpick, and pulling up to locate and pull the vein out.

Rinse shrimp under cold water then pat the shrimp dry and set aside.

Combine the mochiko flour, paprika, cayenne pepper, and salt in a mixing bowl. Add in the shrimp and gently toss until coated evenly.

In a skillet, add your butter over medium heat. Once butter is melted, add in garlic and cook lightly for about 2-3 minutes, until browned just slightly.

Remove from heat once garlic starts browning slightly so that it doesn’t burn. Pour the garlic and butter mixture into a separate bowl and set aside.

In the same pan, add a splash of olive oil and return to medium heat. Add shrimp in a single, even layer (do this in two batches if needed). Cook the shrimp for about 2 minutes on each side until crisp on each side and cooked through.

Pour the garlic butter back into the pan with the shrimp, stirring very gently to incorporate. Squeeze with lemon, then remove from pan and serve with rice.
