Speedy Miso Beans & Greens

This is one of those recipes that we’ll be eating on repeat- a super delicious one pot meal that only takes around 30 minutes. Find some quality cherry tomatoes and you absolutely can not go wrong.

2 small shallots finely sliced

fresh basil leaves

2 cans

1 pint cherry tomatoes

3 cloves

Instructions:

Ingredients:

1 Tbsp

chili oil drizzle

handful of kale, chopped

1.5 Tbsp miso

~3tbsp olive oil


Heat olive oil over medium and then throw in garlic, shallots, and tomatoes. Let those cook until the tomatoes begin to break down.

Now add in your beans, miso, chicken bullion, and around 2 cups of water (enough to cover beans) and bring to a boil.

Once it hits a boil, reduce the heat and simmer for about 5 min, then throw in your chopped kale and basil.

Let those cook over low until both the beans and the greens soften, then cut the heat.

Spoon the beans into and bowl, garnish with a drizzle of more olive oil, a few dashes of chili oil, and some pepper.

Serve with a crusty piece of bread to soak everything up!
