Red Miso Caramel
A sweet, savory, and decadent caramel made from just a few ingredients. Reccomended as a topping for our sweet potato milk bread pudding recipe.
1/3 cup
heavy cream
1.5 Tbsp red miso

3/4 cup sugar
2 Tbsp butter
In a small saucepan, add the sugar and 1/4 cup of water over medium-low heat and bring up to a boil.

Swirl the pan to let the water slowly evaporate until the sugar bubbles and thickens and begins to caramelize.

Once the sugar has turned brown, add in the butter and mix vigorously to combine. (It should bubble violently so be careful)
3.
In a separate bowl, whisk together the heavy cream and miso.
4.
Add the cream/miso mixture to the saucepan and continue to mix until the caramel thickens.
