Tomato Miso Pasta w/ Shrimp
This is one of those recipes that we’ll be repeating for a long, long time. Find some quality cherry tomatoes and you absolutely can not go wrong. So simple and so good.
Ingredients:
2 small shallots finely sliced
1/4 lemon juice
3/4 lb shrimp, peeled and cut
2 pints vine-on cherry tomatoes
3 cloves, rough chopped
1 Tbsp
1 tsp
parsely, finely chopped
2 servings thin spaghetti
1/4 cup olive oil
1 Tbsp miso
Instructions:
Add olive oil to pan over medium heat, then throw in tomatoes. Season with a pinch of salt.

Let the tomatoes cook for about 30 sec, then add in the shallots and garlic and mix.

Meanwhile, bring a pot of water to a boil and throw in your pasta noodles.

Continue to cook down the tomatoes over medium-low heat until they’ve broken down and the shallots and garlic are fragrant and soft.

Throw in the shrimp and stir. Then add in miso, lemon juice, chili flake, salt and pepper.
5.
Cook for a few minutes and then add in butter and continue to mix. Add pasta water to loosen the sauce if necessary.

Finally, throw in your pasta noodles, a little pasta water, and parsely.
7.
Mix over low heat until the noodles are completely coated and the sauce is a nice consistency. Then you’re ready to plate!
