Spicy Cold Soba Noodles With Beef

This cold, spicy and refreshing soba noodle dish is an easy weeknight meal you’ll want to make all summer

Ingredients:

2 servings soba

3/4 lb sliced beef

la-yu oil

soba tsuyu

scallion

shiso

daikon

Start by simmering the beef until cooked through in a mixture of 1/2 cup dashi, 3 TB shoyu, 2 TB sake, 2 TB sugar, and 1 TB mirin.

Next prep your toppings by grating the daikon (and squeezing out the water), then slicing the shiso and scallion finely.

Now cook the soba noodles in boiling water until done, then rinse under cold water.

Add the noodles to a bowl, pour over the bottled tsuyu, and top with beef, scallion, shiso, and daikon.

Finish it off with a few pumps of the la-yu oil and a dusting of shichimi togarashi (depending on how spicy you want it).
