Spicy Korean Pork Don

A quick, no-marinade-needed spicy pork recipe inspired by Jeyuk Bokkeum. Serve it atop a bed of steaming white rice for a simple and filling weeknight meal.

1 Tbsp gochujang

1 tsp sesame oil

Ingredients:

1 tsp

1 Tbsp sake

3/4 lb sliced pork belly (6mm)

1 clove, grated

1 tsp

scallion

sesame seeds


Instructions:

Start by combining 3 Tbsp water, gochujang, soy sauce, honey, sugar, sake, garlic, sesame seeds and sesame oil in a bowl and set aside.

Next prep your scallions. Shred the green parts of 2-3 scallions and drop into a bowl of iced water, then set aside.

Now cut your pork belly into 1” pieces or the size of your choice.

Add the pork belly into a pan over medium heat, and cook until the fat renders and both sides are golden and slightly crisp.

Now pour in your sauce and mix. Let the sauce come to a boil until it thickens and reduces by about half, then cut the heat.

Plate the pork belly over a bed of hot rice and garnish with the shredded scallion, more sesame seeds, and enjoy!

Note: The pork belly we used was a slightly thicker, 6mm cut. You can also buy a block of pork belly and slice it yourself.
