Steak-don w/ yuzu kosho + scallons
Thin layers of juicy steak are complimented perfectly with this tangy yuzu kosho and scallion sauce.
Ingredients:
1 tsp yuzu kosho
1 NY strip steak
1/2 tsp sugar
wedge of lemon
1 tsp soy
for steak
1 Tbsp olive oil
1/2 cup, finely chopped
rice for serving
1 yolk per bowl
Instructions:
Season steak with salt & pepper. Sear in neutral oil in a skillet over medium high heat until preferred doneness. Set aside to rest.

Chop 1 bunch scallions as finely as you can.

In a bowl, whisk together yuzu kosho, soy sauce, sugar, olive oil, lemon, and some cracked black pepper.
Add chopped scallions and gently mix to coat with sauce.

Thinly slice steak and lay across a bowl of hot rice. Add a dollop of the scallion mixture, and finish with raw egg yolk.
note: We liked eating ours with a salad of arugala dressed with sesame oil, lemon and salt.
