Tomato Rice w/ Fried Egg
Inspired by the classic Chinese tomato-egg stir fry, this recipe infuses rice with sweet tomatoes inside a rice cooker, then tops it with a fried egg for a nice contrast in textures.
2 vine-on tomatoes
1 tsp dashi powder
1 tsp sesame oil
2 eggs

Ingredients:
1 cup rice
1 Tbsp soy sauce
chili crunch
scallion
Wash 1 cup rice, then in rice cooker add rice, soy sauce, dashi powder, sesame oil, and 1 cup of water.
Cut tomatoes into quarters, then place on top of the rice. Don’t mix it! Then cook on mixed (if you have it) or regular setting.

When the rice is close to being done, fry up a couple eggs sunny-side up with a nice crispy bottom.

When the rice is done, mix it together to incorporate the tomatoes. Plate with egg, soy sauce, then chili oil and scallion!
