Yaki Imo Sundae

Turn a simple Japanese sweet potato into a decadent dessert with just a few ingredients you probably already have.

Ingredients:

1/4 cup

1 Japanese sweet potato

1 scoop

Instructions:

flaky salt

black sesame seeds


Scrub your potato, poke some holes in it, and then bake it uncovered for 90 mins at 325°F.

While the potato is baking, make burnt sugar syrup (instructions below). A brown sugar simple syrup also works!

When the potato is done (it should be a custardy texture), take it out and let it rest for 15 mins.

Slice it open, add a scoop of vanilla ice cream, and top with syrup, a pinch of black sesame seeds, and flaky salt.

Notes: To make a burnt sugar syrup, add 1/4 cup of white sugar to a saucepan over medium heat. Cook until it melts and then turns dark brown, then immediately remove from heat. Carefully stir in hot water until desired consistency.
